It’s totally fine to watch the filler (it’s usually at least decent in this series), but it helps to know beforehand so you’re prepared for the slower pace. The current arc will also add a lot of anime-only material even in canon episodes. The original Dragon Ball was almost always in danger of catching up to the manga, so a 1-chapter-to-1-episode pace will be pretty common for the next stretch.
